Story
About this book
Jet Tila is a Thai-American chef whose family has deep roots in Thai food culture in Los Angeles. His family operated Bangkok Market, one of the first Thai grocery stores in the city, and ran restaurants as well. This cookbook collects 101 recipes drawn from across Thailand's regional cooking traditions, covering well-known classics, popular street foods, and lesser-known dishes that Tila considers underappreciated.
The selection spans the country's varied regional cuisines. Alongside traditional preparations, the book includes plant-based versions of popular dishes, designed to open Thai cooking to a wider range of dietary preferences and to reflect how the modern Thai kitchen continues to adapt. Wok cooking features prominently, consistent with its central role in Thai food preparation.
Tila organizes the recipes as a personal guide shaped by his professional background and family heritage. The book is structured to serve both as a broad introduction for cooks unfamiliar with Thai cuisine and as a useful reference for those already experienced with it. Common Thai ingredients and techniques, from curry pastes and fish sauce to high-heat stir-frying, appear throughout the collection.
